RECIPE: CRISPY CHICKEN

CRISPY CHICKEN

Alexander Marescu has loved cooking for many years and is well known for sharing his own, unique and delicious recipes on the Internet. This month we enjoy Alex’s recipe for ‘Crispy Chicken’, which comes highly recommended to anyone on a high protein or keto diet plan.

What you’ll need for the Crispy Chicken:

  • 6 Deboned chicken thighs (serves 2)
  • Smoked Paprika 
  • Hot Paprika 
  • Dried Ginger 
  • Dried Sage 
  • Dried Ground Garlic 
  • Dried Chili Flakes 
  • Dried Onion Powder 
  • Salt 
  • Black Pepper
  • 150g Almond Flour 
  • 2 Eggs 
  • Fresh Chopped Parsley 
  • Greaseproof Paper

Preparation: Place the chicken thighs in a bowl and add all the spices except the fresh parsley. With the spices you can use to your taste, but I find a pinch is enough. In another bowl, pour the almond flour and in a third bowl, break your eggs. 

A good idea is to marinate your chicken overnight, in the fridge for a stronger flavour.

Beat the eggs, dip the marinated chicken in the egg and roll in the almond flour. Place them on greaseproof paper.

Cooking: Preheat the oven to 180 degrees Celsius on the fan assisted setting. When the oven is hot, put the chicken in and cook for 45 min.

Dressing the Plate: Dress the chicken with fresh parsley and serve. You can also add salad, sweet potato wedges, courgette chips, or whatever you fancy.

Strawberries are in season at the moment, and Paphos is one of the leading suppliers on the Island. Other seasonal fruits, include, oranges, lemons, tangerines, grapefruit, Pomelo, and bananas. Also, seasonal vegetables, include, wild asparagus, capers, artichoke, dill, parsley, broccoli, beetroot, radishes, cabbage, celery, spinach, Swiss chard, fennel, avocado, cauliflower, lettuce, carrots, mallow, wild mushrooms, lapsanes (wild greens) and purslane.
