6-WEEK WINE COURSE – STARTING 29 SEPTEMBER 2021
Wine Course Paphos – A new 6-week Wine Course is due to begin in Paphos. Learn from one of Cyprus’ leading wine experts, well-known Sommelier and Wine Writer – George Kassianos.

If the answer is Yes to any of the above, then why not join this Wine Course. Our classes, with George Kassianos, will teach you how to recognise what you really like and enjoy, give you the confidence to try new things, experiment, and start your own collection of wines that you love and want to share with friends. Join in for a fun and sociable journey into the world of wine. Find out why you like what you like, how to tell what you are tasting, and the best foods to pair with your favourite wines. This new wine course in Paphos includes a series of six wine classes designed to give an introduction and insight into appreciating fine wines from around the world. It provides a practical and fun approach for discerning wine lovers of all levels of experience, from the beginner through to the more advanced. Please note this is the only full wine course in Paphos under the guidance of George in 2021 and numbers are very limited. A certificate for the course will be awarded upon completion.
During each class, we will taste at least six wines and learn how to assess and develop our tasting skills, and how to evaluate wine, without even seeing the label!
WHAT WILL I LEARN DURING THE 6-WEEK WINE COURSE?
- WEEK 1: SENSORY PERCEPTION, STILL WINES & BASIC GRAPES
- Date: Wednesday 29th September at 6.30pm
Learn how to use all your senses to understand and fully appreciate wine – sight, smell, touch and taste, all have a part to play, and you will learn how to use them in this lesson.
- WEEK 2: THE FRUIT FACTOR – WHITES, ROSÉS & REDS
- Date: Wednesday 6th October at 6.30 pm
Wines are often characterised by their main fruit flavours. Learn to identify and differentiate types of fruit in wines, including orchard fruits, stone fruits, citrus fruits, berry fruits and tropical fruits. You can find all these flavours present in different wines from all over the world. This lesson will help you to understand and define your preferences.
- WEEK 3: THE ACID & MINERAL TEST – GREAT WHITES & REDS
- Date: Wednesday 13th October at 6.30 pm
What exactly is minerality in a wine, and what does it taste like? Where does it come from? How do you identify acidity? It is actually a very localised taste. It is what makes a wine refreshing and the reason for encouraging you to take another sip! This fascinating lesson will teach you all about acidity and minerality, and you will get the chance to sample some exciting wines.
- WEEK 4: THE BUBBLES TURN & SUGAR SHOCK
- Date: Wednesday 20th October at 6.30 pm
In Week 4 of the wine course, you will learn about sparkling wines and how they are made and the difference between Champagne and Prosecco. You will also taste some dessert wines to die for and identify how to store wine and how to confidently assess faults in a wine.
- WEEK 5: THE TANNINS – BOLD & BEAUTIFUL REDS
- Date: Wednesday 27th October at 6.30 pm
Learn to understand and identify tannin in red wine, and the role it plays. Discover your oak-aged personal red wine preference – love it or hate it – you will learn all about tannins in this lesson, and how to match the best foods with red wine.
- WEEK 6: OAK – GREAT WHITES & REDS
- Date: Wednesday 3rd November at 6.30 pm
Ageing high-quality fine wine in oak barrels, is favourable to any other ageing method, as it enhances the flavour and quality. Oak barrels and wine combine to make some of the world’s most desirable and expensive wines. In this class, George will discuss the many different types of oak barrels, while you get to taste a selection of beautiful wines.
ABOUT GEORGE KASSIANOS
George Kassianos is the President of the Cyprus Sommeliers Association. He has also recently been appointed to be the Contest and General Assembly Liaison Officer, by the International Sommeliers Association (ASI), which takes him all over the world to attend international wine events and competitions. He writes for many publications, including Cyprus in Style Magazine and the weekly wine column of the Sunday Cyprus Mail. He is a wine and hotel educator and presenter who holds regular wine events across Cyprus. He was appointed by the Government to be a member of the Wine Expert Committee for six years, which certifies PDO wines and acts, in an advisory capacity, to the Wine and Spirits industry.
